The best things in life are sweet and simple.
Some of my favorite things in life include sunsets, the smell of the ocean, laughing until it hurts, and pineapple.
Rice is simple, and the pineapple adds the perfect amount of sweet. Since I can’t eat gluten (though I am only successful at not giving in 90% of the time), we eat A LOT of rice in our house. This pineapple lime brown rice is simply perfect and easy, giving you more time out of the kitchen to enjoy life.

One of my favorite ways to serve this pineapple lime brown rice is with spicy Thai food or with my jalapeno chicken tenders. The pineapple rice is perfect with spicy food or even on its own.

- 2 cups uncooked brown jasmine rice
- 2 limes
- 1 pineapple
- 1/4 tsp. sea salt
- 1/4 cup cilantro
- Rinse and drain 2 cups of brown jasmine rice. Put the rice in the rice cooker. Instead of filling the cooker with water to the “2 cup” mark, fill it to the “3 cup” mark in your rice cooker. That usually means 3 cups of water for the 2 cups of brown rice. Add the sea salt and turn cooker on.
- Slice the pineapple into chunks, avoiding the core. You will then dice up the pineapple.
- In a large bowl, mix pineapple, juice from lime, and cilantro into rice. Sprinkle in sea salt to taste, if desired.
