Honey Ginger Beef & Veggie Stir-Fry

Between late summer weekend getaways and sorting through piles of laundry during the week, there never seems to be enough hours in the day to catch up on life. Back-to-back trips have me craving greens and quick meals that allow me to have time to catch up on sleep!

Asparagus. Carrots. Ginger. Soy Sauce. Honey. Green Onions. Beef. Sesame Oil.

Those ingredients are all regulars in my kitchen. So I decided to whip them up into one of my favorite quick and easy weeknight dinners — a beef stir-fry! This healthy Honey Ginger Beef & Veggie Stir-fry is fresh, flavorful and easy as recipes come!

Cooking on high heat allows you to get a good sear on the meat and vegetables without overcooking them.

  • For the stir fry
  • 1½ cup uncooked brown rice
  • 2 tablespoons sesame oil
  • 1 pound beef steak
  • 2 cups chopped asparagus
  • 2 cups carrots, shredded
  • 3 green onions, sliced
  • 3 cloves garlic
  • 2 tablespoons ginger, zest
  • 2 tablespoons honey
  • ½ cup low sodium soy sauce
  • ¼ cup water
  • ¼ cup rice wine vinegar
  • ¼ cup canola oil


  1. Cook the brown rice in rice cooker according to directions.
  2. Puree all the sauce ingredients together in a food processor until smooth. Set aside.
  3. Cut the beef into slices.
  4. Heat the sesame oil in a large nonstick skillet over medium heat. When the oil gets warm, or starts to move in the bottom of the pan, add the beef and about ¼ cup of the stir fry sauce. Pan-fry the beef to your liking (I like my sirloin medium to medium-rare so I tend to not wait until its golden brown). Remove from the pan and drain on paper towel lined plates.
  5. Return the pan to the heat and add the asparagus with ¼ cup stir fry sauce. When the asparagus is bright green and tender crisp, add the carrots and toss together. Arrange the veggies and beef over the cooked rice, and cover with more sauce to taste. Sprinkle with the green onions.
