I would say I love curry, but that would be a total understatement. It has reached the point of craze lately. On Saturday night, we went out to dinner with some friends. Ryan ordered a burger, and it came with a pathetically small amount of sweet potato fries. It left us craving more, so Sunday night, I made my favorite Baked Curry Sweet Potato Fries.
Tossed in a combination of aromatic curry and spices, these humble oven baked sweet potato fry are something truly special.
Tried, tested and proven, everyone is going to love these fries. Trust me, I fed them to someone who has always told me they quote “hate curry”. They ate half the batch, and proceeded to rave about how they were some of the best sweet potato fries they have ever had. HA!

- 4 medium sweet potatoes
- 2 tablespoons olive oil
- ½ tablespoon sea salt
- ½-1 tablespoon curry
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- Preheat oven to 450 degrees F.
- Combine all ingredients in a large zip-top bag; toss until fries are evenly coated.
- Spread across a baking sheet, and bake for 22 mins; toss occasionally.
- Let the fries cool for 2-5 minutes, serve, and devour!
I do between ½ to 1 tablespoon, because ½ will make these fries delicious and 1 will really bring out the curry flavor!
